Chunky Veggie Pasta over Mixed Greens

  • 1 can crushed tomatoes 

  • Italian Seasoning

  • Garlic Seasoning

  • Salt & Pepper

  • Stevia to taste

  • Sliced mushroom (fresh or canned)

  • 1/2 bag of Fajita veggies frozen (red and green bell pepper, onion)

  • **Add any other veggies that you enjoy or omit ones you may not like.**

Directions:  Sauté your favorite chunky vegetables in veggie broth and season to your liking.  Add the crushed tomatoes, spices of your choice and 1 pack of stevia.  Simmer for 15-
20 min.  Serve one cup over a bed of leafy greens or spaghetti squash.  Enjoy!
